Step 1

Wash and spin-dry the arugula. Remove the larger stems. Brush the smoked fish fillets with oil.

Whisk the cider vinegar with salt and pepper, pouring in the remaining hazelnut oil.

Peel the onion and chives and cut them into thin slices.

Step 4

Arrange the fish fillets harmoniously on a plate, with the chives, onions and arugula seasoned with sauce. Sprinkle with walnut kernels and serve with lemon wedges.
